Blast Chiller
A blast- chiller is an appliance which is used to literally blast the food rapidly with extremely cold air at such a low temperature that it makes it relatively safe from bacterial growth. As we all know bacteria growth increases rapidly at certain temperatures mainly between +8c and +68c. When the food is rapidly cooled from a temperature of +70c to +3c within a timescale of 90 minutes it is made safe for later use and can be stored away in the standard form of refrigeration. The main users of this kind of technology are the food and catering industries, so as to make sure the food is safe for consumption. It is impossible to remove heat from foodstuffs this fast in a normal refrigeration system; these appliances are purely designed to store food once it has already been chilled. And so the blast- chiller was developed, having the ability to remove the heat from the produce rapidly and safely, improving the storage life and quality of the food.
